how write subject matter title in a post

Only get two choices housebreaking or grooming on the training site. I'm getting so forgetful

I think what you're asking is how to post in Behavior and Health *without* posting in Grooming or Housebreaking?  Short version, if you click into any forum you will see subforums (if any) at the top, followed by individual topics for that forum. Here's what it looks like on my desktop (on a phone it will be similar concept, just appearing more vertically).

A text-based way to view how forums are organized:

Behavior & Health

• Grooming
  • topic one
  • topic two
• Housebreaking
  • topic one
  • topic two

topic one (behavior and health)
topic two (behavior and health)
etc
