    • Ingredients

      This cake is so simple to make and so satisfying to eat. Don't be alarmed when the batter looks like there isn't enough for the quantity of pears, But it works out great. :) it takes but minutes to assemble.

      2 eggs

      1/4 cup milk

      1tablespoon of lemon zest

      2/3 cup of sugar ( actually cut it down to half a cup. Depends on personal taste)

      1/3 cup of olive oil

      1 1/2 cups of flour

      1 1/2 tsps of baking powder

      4 large pears.

      Procedure

      Beat eggs, sugar, milk, olive oil, till smooth,add lemon zest, flour and baking powder. Just mix. Slice the pears into about 1/4 inch slices (I don't bother to peel. But you can). Add to batter, covering all the pear slices with some batter. Pour into approximately 8 inch by 8 inch greased pan. Bake for 50 minutes at 375.

      Lovely served warm with custard or cream or ice cream.

      Notes, Options, Substitutions

      I have also used other fruits. I.e. Apples, plums, but I like the pears the best.
