Loss of appetite - diabetic diet suggestions?

We're having a hard time getting Buffy to eat her breakfast in the morning.  She needs to eat so I can give her an insulin injection, and it's becoming a struggle.  We've been feeding her about 1/4 cup kibble (forget the name but it's specifically for diabetic dogs) and an equal amount of cooked brown rice with green vegetables and chicken.  Sometimes she'll start eating from her bowl after I give her a few mouthfuls by hand, but this morning she wanted nothing to do with it.  

She still seems to have a decent amount of energy and has been going on several walks a day with no problem, and she eats a snack at lunchtime and a full dinner.  

Any suggestions as to something (acceptable for a diabetic dog) we could add to her morning meal to stimulate her appetite?

Mix in some sardines . Only a small piece will do as they are rather stinky

Some additional possibilities : natural, unsweetened peanut butter, low sodium cheese, canned tuna. (I would double-check to be sure these are low carb and safe for canines).
